Mushroom Plum and Chicken Skewers - BHG Diabetic Friendly




Mmmmm these were sooo yummy! You have to try this recipe before summer is gone.

(One tip might be to do them over tin foil or something similar so that the skewers don't burn!)

BBQ Pulled Pork Sandwiches - BHG Diabetic Friendly

I know, I know there is no picture! But I'm sure you all know what BBQ Pulled Pork Sandwiches look like...and they were just too tasty to wait for a picture :P. But wait...what have we here? Leftovers! Yay! we are about to eat this for lunch so before it was gone I snapped up a pic.
Yes these are REALLY good - they were rated 4/5 because I overcooked the pork a little lol.
 

BBQ Pulled Pork Sandwiches

2 med onions cut into thin wedges
1/2 c. water
2-2 1/2 lbs boneless pork sirloin roast
1/2 tsp chili powder
1/2 tsp pepper
1/4 tsp cumin
1/4 tsp garlic powder
1 c. low calorie bbq sauce
1/4 c. cider vinegar
1 Tbsp honey
1/4 tsp ginger
1/4 tsp cumin
10 hamburger buns

In 3 1/2 - 4 qt slow cooker combine onions and water; set aside. Trim fat from meat. If necessary cut to fit into slow cooker. In a small bowl combine chili powder, pepper, cumin, garlic powder. Sprinkle over meat and rub in. Place meat in cooker.

Cover and cook on low heat 8-9 hours or high heat 4-4.5 hours.

Using a slotted spoon remove meat and onions. With two forks pull meat apart into shreds.

In a large saucepan combine remaining ingredients and heat through. Toss all together and fill each bun.

Pasta with Shrimp in a Creamy Dill Sauce

Because I've been keeping you in the dark about our meal plan for the past couple weeks I thought I'd share my newest creation with you. So So So Good! This one deserves an extra yum! Unfortunately for you though I don't cook with exact measurements. I found the original recipe somewhere and adapted it to the ingredients I had on hand. The original called for buttermilk and yogurt in addition to the sour cream.


But here it goes...
Thaw your shrimp.
(I always buy the cooked shrimp rings instead of buying the bags of shrimp as you can get them for a better price)
Cook your pasta.
Grate some zucchini (I had some frozen so I just thawed it)
Toss almost an entire med size sour cream container in a frying pan, along with some oil. And some milk to water it down a bit to a saucy consistency.
Add a good amount of dill, some basil, salt and pepper, and I added some chili pepper as well (awesome with dill!)
And add the shrimp as well. Heat on med until hot. (The shrimp ring shrimp is pre-cooked)


That's it! Now pour some of that delish sauce on your pasta and your good to go!

Menu Plan Monday * Week of July 4th

Hello everyone and welcome to my second week of posting my menu plan! I've always done menu planning to some extent otherwise all we would eat is chicken fingers and perogies :( As much as hubby says he would enjoy that I know it's important it is for our bodies, and our budget! to keep healthy food on the table. If you don't know I also have a slight case of diabetes so my menu will be very low in sugar but I love to sweeten my food and drinks with Stevia, so you'll be sure to see her name around here again!

Menu Plan Monday - Anniversary - Roasted Salmon w Lemon Relish

Helloo everyone and welcome to my first Menu Plan Monday blog post!


 I am feeling pretty fabulous today as it is 9:35 and the baby is still sleeping! Hooray for extra sleep!
I've been busy working on more summer cotton hats to bring to Lil Bit Baby, and toying with the idea of having a Farmers Market Table either at the Town Center on Saturday mornings or at the Riverbank Discovery Center on Thursday evenings. The Riverbank one doesn't start until July 7th so I'm going to wait and check it out before I make my final decision.

I also got some really cute girly cotton which you will see in upcoming hats and the 2 in 1 belt/headbands!

Now here we go!

Monday:

Tuesday: (3rd Anniversary!)

And there you have it!
I planned this menu on Thursday when our local fliers came out and got chips, hamburger, corn on the cob, broccoli, lettuce, mushrooms and bacon on sale at various stores.

Mom's Fun Mix!



So last week I was looking for something quick to make to take with us for a snack at the movies and this was what I came up with. I was thinking my hubby would really like the marshmallows and smarties but I was the one who ended up finishing the whole batch in one movie! Good thing I didn't check my blood sugar after :P
